Ingredients
- 1/3 cup mayonnaise
- 2 tablespoons finely chopped pickles, plus extra for serving
- 2 tablespoons minced shallot (Cook's Note)
- 1/2 teaspoon hot sauce, preferably Louisiana-style
- Kosher salt and freshly ground black pepper
- 1 pound large shrimp, peeled, deveined, and patted dry
- 2 teaspoons Cajun seasoning without salt
- 2 tablespoons unsalted butter
- 4 hero rolls, sliced open
- Shredded iceberg lettuce and sliced tomatoes, to serve

Instructions
- Preheat your oven to 350F. In a small bowl, mix together the mayonnaise, chopped pickles, shallot, and hot sauce. Season with salt and pepper to taste, then set aside.
- In a large bowl, toss the shrimp with Cajun seasoning and 1/4 teaspoon of salt. Melt the butter in a large nonstick skillet over medium-high heat. Add the shrimp and cook until they turn pink, about 1 1/2 to 2 minutes on each side.
- While the shrimp cooks, place the rolls on a baking sheet and toast them in the oven for about 5 minutes. Spread the mayonnaise mixture on the inside of each roll. Fill with the cooked shrimp, shredded lettuce, and sliced tomatoes. Serve with extra pickles.
Cook's Note: Minced onion can be used as an alternative to shallot.
