Ingredients
- 4 chipotle peppers, stems removed
- 1/2 cup olive oil, plus an additional 2 tablespoons
- Juice of 2 limes
- Salt and freshly ground black pepper
- 1 flank steak (about 1 1/2 to 2 pounds)
- 2 jalapenos, deseeded and thinly sliced
- 1/4 cup chopped fresh cilantro leaves
- 2 roasted red bell peppers, seeded and sliced into strips
- 1/2 red onion, thinly sliced
- 1/4 cup finely chopped dry roasted peanuts
- Juice of 2 oranges
- 1/4 cup soy sauce
- A pinch of sugar
- 6 to 8 cups mesclun greens, washed and dried
Instructions
- Place the chipotles, 1/2 cup olive oil, and lime juice into a blender or food processor. Season with salt and black pepper to taste, then pulse until you get a smooth, thick puree. Coat the flank steak thoroughly with this chipotle sauce and allow it to marinate for 30 minutes.
- Heat your grill to a high temperature.
