Grilled Steak with Berry Barbecue Sauce

Ingredients
- 2 tablespoons extra-virgin olive oil, plus extra for the grill
- 1 shallot, finely chopped
- 2 garlic cloves, minced
- 1 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/4 cup bourbon
- 1 1/2 cups blueberries
- 1 cup blackberries
- 1/4 cup ketchup
- 2 to 4 tablespoons packed dark brown sugar
- 1 tablespoon balsamic vinegar
- 1 tablespoon soy sauce
- 1 chipotle pepper in adobo, roughly chopped
- 2 sprigs fresh thyme
- Kosher salt and freshly ground black pepper
- 1 tablespoon unsalted butter
- 6 strip steaks (8 to 10 ounces each)
Directions
- Make the irresistible berry barbecue sauce: Heat olive oil in a medium saucepan over medium heat. Saut shallot, garlic, cumin, and coriander until fragrant and tender, about 3 minutes. Deglaze with bourbon, reducing by half in 1 minute. Stir in 1/2 cup water, blueberries, blackberries, ketchup, 2 tablespoons brown sugar, balsamic vinegar, soy sauce, chipotle, thyme, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Simmer until thickened, 20 to 25 minutes. Off heat, swirl in butter. Taste and add remaining sugar if needed for perfect balance.
- Fire up the grill: Preheat to medium-high and oil grates. Pat steaks dry, season generously with salt and pepper. Grill 5 to 6 minutes per side for juicy medium-rare with gorgeous marks. Rest 10 minutes on a plate.
