Ingredients

  • 2 tablespoons extra-virgin olive oil, plus extra for the grill
  • 1 shallot, finely chopped
  • 2 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/4 cup bourbon
  • 1 1/2 cups blueberries
  • 1 cup blackberries
  • 1/4 cup ketchup
  • 2 to 4 tablespoons packed dark brown sugar
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon soy sauce
  • 1 chipotle pepper in adobo, roughly chopped
  • 2 sprigs fresh thyme
  • Kosher salt and freshly ground black pepper
  • 1 tablespoon unsalted butter
  • 6 strip steaks (8 to 10 ounces each)

Directions

  1. Make the irresistible berry barbecue sauce: Heat olive oil in a medium saucepan over medium heat. Saut shallot, garlic, cumin, and coriander until fragrant and tender, about 3 minutes. Deglaze with bourbon, reducing by half in 1 minute. Stir in 1/2 cup water, blueberries, blackberries, ketchup, 2 tablespoons brown sugar, balsamic vinegar, soy sauce, chipotle, thyme, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Simmer until thickened, 20 to 25 minutes. Off heat, swirl in butter. Taste and add remaining sugar if needed for perfect balance.
  2. Fire up the grill: Preheat to medium-high and oil grates. Pat steaks dry, season generously with salt and pepper. Grill 5 to 6 minutes per side for juicy medium-rare with gorgeous marks. Rest 10 minutes on a plate.
  3. Serve with flair: Stir resting juices into the warm sauce; thin with water if desired. Slice steaks and drizzle with this vibrant, smoky berry BBQ sauceyour guests will rave about this flavor-packed showstopper!

Steak Diane for Two Recipe

We developed this elegant flambéed steak recipe to make just two servings — perfect for a special Valentine’s Day meal or date night. Steak Diane is a classic dish that rose to popularity in the 1940s and 50s, especially in New York City. Steak was pounded and then a pan sauce was made with Worcestershire, mustard and shallots. In Manhattan restaurants it became popular to flambé the cognac added to the sauce, making it a dramatic dish to cook tableside. Over the years more ingredients were added, including mushrooms, tomato paste and cream. The result is luxurious and decadent. We added instructions for making a quick side of buttery green beans so the whole meal can be on the table in just about 30 minutes.
