  • 2 medium onions, thinly sliced
  • 1/4 cup all-purpose flour
  • 2 tablespoons panko bread crumbs
  • 1 teaspoon kosher salt

For the Beans and Sauce:

  • 2 tablespoons plus 1 teaspoon kosher salt, divided
  • 1 pound fresh green beans, washed, trimmed, and halved
  • 2 tablespoons unsalted butter
  • 12 ounces mushrooms, cleaned and cut into 1/2-inch pieces
  • 1/2 teaspoon freshly ground black pepper
  • 2 cloves garlic, minced
  • 1/4 teaspoon freshly grated nutmeg
  • 2 tablespoons all-purpose flour
  • 1 cup chicken broth
  • 1 cup half-and-half
  1. Preheat your oven to 475F and get ready to create crispy onion magic that elevates this dish to irresistible heights.
  2. In a large bowl, toss the onions, flour, panko, and salt until perfectly coated. Spray a sheet pan with nonstick spray, spread the mixture evenly, and bake on the middle rack until golden and crunchy, about 30 minutesstir 2 to 3 times for even crisping. Cool slightly, then drop the oven to 400F.
  3. Meanwhile, blanch the beans to perfection: Boil a gallon of water with 2 tablespoons salt in an 8-quart pot, add beans for 5 minutes, then shock in ice water. Drain and set asidethese vibrant greens are your star ingredient!
  4. In a 12-inch cast iron skillet over medium-high heat, melt butter and saut mushrooms with 1 teaspoon salt and pepper until they release their juices, 4 to 5 minutes.
