Ingredients
- 2 sticks unsalted butter, softened, plus extra for preparing pans
- 3 cups all-purpose flour, plus more for dusting pans
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 1/4 cups granulated sugar
- 4 large eggs, at room temperature
- 1 tablespoon vanilla extract
- 1 1/4 cups whole milk (or substitute: mix 3/4 cup heavy cream with 1/2 cup water)

Directions
- Preheat your oven to 350F. Grease two 9-inch round cake pans with butter, line bottoms with parchment paper, lightly butter the parchment, and dust with flour, tapping out excess.
- Whisk together flour, baking powder, and salt in one bowl. In a large bowl, beat butter and sugar on medium-high until pale and fluffy, about 3 minutes. Reduce speed, add eggs one at a time, scraping bowl after each. Beat in vanilla (batter may look curdled). Add flour mixture in three additions, alternating with milk, starting and ending with flour; mix until just combined and smooth.
- Divide batter evenly between pans. Bake until golden and a toothpick inserted in centers comes out clean, 30-35 minutes. Cool in pans on racks 10 minutes, then loosen edges with a knife, invert onto racks, remove parchment, and cool completely. Trim tops if needed for even layers.
