Ingredients
- 8 ounces thinly sliced bacon, finely chopped
- 1 pound ground pork shoulder
- 2 garlic cloves, grated
- 1 tablespoon fresh cilantro, minced
- 1 teaspoon peeled ginger, grated
- 1 teaspoon sugar
- 2 tablespoons soy sauce
- Kosher salt and freshly cracked black pepper, to taste
- 4 lemongrass stalks, trimmed and cut into twelve 4-inch lengths
- Sweet chili sauce, for serving
Instructions
- Preheat your broiler. In a large bowl, gently mix the chopped bacon, ground pork shoulder, grated garlic, minced cilantro, grated ginger, sugar, and soy sauce. Season generously with kosher salt and freshly cracked black pepper.
- Lightly moisten your hands, then shape the flavorful mixture into 12 even balls. Slide a lemongrass stick halfway into each ball and mold the meat around it to form a sausage-like pop, leaving the exposed stalk as a fun, easy-to-hold handle.
- Arrange the pops on a foil-lined broiler pan. Broil until irresistibly golden brown, about 3 to 4 minutes per side. Serve hot with sweet chili sauce for dippingyour taste buds will thank you!
