Preheat the oven to 350 degrees F. 2. Melt the butter in a large saute pan over medium heat. Add the apples and stir to coat them with the butter. Pour in the lemon juice and apple cider. Cook until the apples are tender and the cider has reduced by half. Transfer the mixture to a food processor and pulse until it forms a coarse paste. Set aside. 3. In a large mixing bowl, combine the flour, cinnamon, baking soda, nutmeg, both sugars, and a pinch of salt. Create a well in the center and add the apple puree, egg, and vanilla. Stir until just combined. Fold in the walnuts and raisins. 4. Grease and flour a loaf pan. Pour the batter into the prepared pan and place in the preheated oven. Bake until a toothpick inserted in the center comes out clean, about 40 to 45 minutes. 5. Remove the pan from the oven and let cool for 10 minutes. Take the cake out of the pan and allow it to cool completely. 6. Slice the cake horizontally and spread half of the icing on the bottom layer. Place the top half back on and ice the top of the cake, leaving the sides uncovered. Slice and serve.Cream Cheese Icing: 1. In a stand mixer or with a hand mixer, beat all of the ingredients together until light and fluffy.
