Ingredients:
- 3 cups granulated sugar
- 1 cup light corn syrup
- 1 cup heavy cream
- 1 1/2 tablespoons butter
- 1 1/2 cups toasted pecans
- 3 ounces milk chocolate
- 1 teaspoon vanilla extract

- Allow the caramels to cool and firm up, about 5 minutes. Then, with a candy dipping fork, dip each caramel into the tempered white chocolate.
- Place back on parchment and let the chocolates set for about 5 minutes.
