Whipped Ricotta with Raisins and Pine Nuts

Ingredients
- 2 tablespoons plus 1 teaspoon white wine vinegar
- 1 1/2 teaspoons honey
- Kosher salt
- 3 tablespoons golden raisins
- 2 tablespoons extra-virgin olive oil
- Freshly cracked black pepper
- 1 (16-ounce) container whole-milk ricotta cheese
- 1 tablespoon drained capers
- 2 tablespoons toasted pine nuts
- Chopped fresh parsley for garnish
- Toasted baguette slices for serving
Instructions
- In a small saucepan, whisk together 3 tablespoons water, 2 tablespoons vinegar, 1/2 teaspoon honey, and a pinch of salt. Bring the mixture to a boil, then lower the heat and add the raisins. Simmer until the liquid reduces by half, about 6-8 minutes. Let the raisins cool while submerged, then drain.
- Meanwhile, mix the remaining 1 teaspoon vinegar and 1 teaspoon honey with olive oil, a pinch of salt, and freshly ground pepper in a small bowl; set aside.
- In a food processor, combine the ricotta, capers, 1 teaspoon salt, and freshly ground pepper; pulse several times. Transfer to a serving bowl and drizzle with the vinaigrette. Garnish with raisins, pine nuts, and parsley. Serve alongside toasted baguette slices.
