Ingredients
- Kosher salt
- 3 tablespoons extra-virgin olive oil, plus extra for brushing
- 1 3/4 cups grated Parmesan cheese
- 2 pounds large square cheese ravioli
- 2 large eggs, beaten
- 1 1/2 cups pizza sauce
- 2 cups grated low-moisture mozzarella
- 1 cup cooked, crumbled Italian sausage
- 3/4 cup sliced pepperoni
- 1 red bell pepper, diced
- 8 white button mushrooms, thinly sliced
- 1/4 red onion, thinly sliced
- 2 ounces sliced deli ham, chopped
- 1 cup fresh basil, shredded
Special equipment:
A rimmed half-sheet pan
Directions
- Place an oven rack in the lowest position and preheat the oven to 425F. Bring a large pot of salted water to a boil to cook the pasta. Brush the rimmed half-sheet pan lightly with olive oil, then cover the bottom and sides with 1/2 cup grated Parmesan cheese.
- Cook the ravioli until just al dente1 to 2 minutes less than what the package instructs. Drain and pat dry. In a large bowl, toss the ravioli with the beaten eggs, olive oil, 1/2 cup Parmesan, and 1/2 teaspoon kosher salt. Spread the ravioli evenly on the prepared sheet pan in a single layer, allowing the edges to slightly overlap. Sprinkle with the remaining 1/2 cup Parmesan.
- Bake the ravioli until they turn golden brown and are crisp on both top and bottom, about 25 minutes.
- Turn on the broiler. Evenly spread the pizza sauce over the ravioli crust. Sprinkle with the mozzarella and the remaining 1/4 cup Parmesan cheese. Layer the cooked sausage, pepperoni slices, diced bell pepper, mushrooms, onion, and ham over the top. Broil for about 3 minutes until the cheese melts, bubbles, and begins to brown. Remove from oven and garnish with the shredded fresh basil before serving.
