Ingredients for Cake:
- 1 large zucchini, finely grated (approximately 2 cups)
- 1 (1 lb 2.25 oz) package chocolate fudge cake mix (suggested: Betty Crocker Super Moist)
- 2 teaspoons ground cinnamon
- 1 large egg
- 2 large egg whites
- 3/4 cup plain nonfat yogurt
- 3/4 cup applesauce

- 1 (12-ounce) package soft silken tofu
- 1 (3.9-ounce) package instant chocolate fudge pudding mix (suggested: Jell-O)
- 1 teaspoon ground cinnamon
- 1 (8-ounce) container whipped topping (suggested: Cool Whip Lite)

- Preheat the oven to 350F. Lightly spray only the bottom of a 9x13 inch glass cake pan with cooking spray.
- For the Cake: Place the grated zucchini in a fine mesh strainer over a bowl and press gently with a spatula to extract excess moisture. In a large bowl, mix together the cake mix, cinnamon, egg, egg whites, yogurt, and applesauce. Beat with an electric mixer on low speed for 2 minutes, scraping the bowl frequently. Gently fold in the drained zucchini. Pour the batter into the prepared pan.
- Bake for 45 to 50 minutes or until a toothpick inserted into the center comes out clean. Allow to cool completely. Once cooled, invert the cake onto a large plate or platter and slice into 12 sizeable squares with a sharp, clean knife.
- For the Mousse Topping: While the cake is baking, in a bowl, combine the tofu, pudding mix, and cinnamon. Beat on high speed with an electric mixer for 2 minutes. Fold in the whipped topping using low speed. Cover and chill until ready to serve.
- To serve, cut each square diagonally to form two triangles. Decorate each plate by spooning chocolate sauce, place two cake triangles, then generously dust with confectioners' sugar and cocoa powder. Finish with a generous spoonful of chocolate mousse on top. Dust with powdered sugar and drizzle with chocolate syrup for extra decadence if desired!
