Impress your guests with these elegant and refreshing Strawberry Lemonade Prosecco Jelliesa sophisticated dessert that combines the effervescence of prosecco with bright strawberry and lemonade flavors. These beautiful jellies are surprisingly simple to make and can be prepared in mini Bundt pans, decorative molds, martini glasses, or even shot glasses. If using glasses, you can serve them directly in the vessels without unmolding, making this dessert as convenient as it is stunning.

Ingredients

  • 1 cup prosecco
  • 3/4 cup strawberry lemonade
  • 1/4 cup pink lemonade vodka
  • 1/2 ounce gelatin powder
  • 1/3 cup diced strawberries plus 6 whole strawberries for garnish
  • 1/3 cup diced peaches

Special Equipment

  • 6 mini Bundt pans (1-cup size), optional

Directions

  1. Place 6 mini Bundt pans on a baking sheet and chill them in the freezer.
  2. Combine prosecco, strawberry lemonade, and pink lemonade vodka in a saucepan. Sprinkle gelatin over the liquid and let it sit for 1 minute. Place the pan over medium-low heat and whisk occasionally just until the gelatin dissolves, about 1 to 2 minutes. Be cautious not to allow the mixture to boil. Remove from heat and let it cool slightly.
  3. Take the pans out of the freezer and evenly distribute the chopped strawberries and peaches in each.
  4. Slowly pour the gelatin mixture over the fruit in each mold. Refrigerate for at least 1 hour to set. These jellies can be prepared up to 24 hours ahead.
  5. Before serving, allow them to come to room temperature for about 10 minutes. Slice the remaining strawberries for garnish.
  6. Dip the bottom of each mold into warm water for 6 to 8 seconds to loosen the jelly, then gently unmold onto serving plates.
  7. Garnish with sliced strawberries and serve immediately.
