Spinach Salad with Garlic Dressing

Ingredients
- 8 ounces bacon
- 3/4 cup olive oil
- 1/4 cup red wine vinegar
- Pinch of salt and pepper
- 1 clove garlic, minced
- 1 pound leaf spinach, stems removed
- 8 ounces mushrooms, thinly sliced
Instructions
- In a medium skillet over medium-high heat, cook the bacon until crisp; drain on paper towels and crumble once cool. Set aside.
- In a small bowl, whisk together the olive oil, red wine vinegar, salt, pepper, and minced garlic to make the dressing.
- Wash the spinach thoroughly and spin or pat dry; tear into bite-sized pieces and place in a medium salad bowl.
- Add the sliced mushrooms and crumbled bacon to the spinach and toss gently to combine.
- Drizzle about 2/3 cup of the dressing over the salad (reserve the remainder). Toss once more and serve immediately.
