Ingredients

  • 2/3 cup pineapple juice
  • 3 tablespoons fresh lemon juice
  • 3 tablespoons fresh lime juice
  • 1 tablespoon ginger, minced
  • 1 jalapeo pepper, deseeded and finely diced
  • 2 tablespoons soy sauce
  • 3 tablespoons honey
  • 3 tablespoons fresh cilantro, chopped
  • 1 pound large shrimp, cleaned and deveined
  • 1 1/2 cups fresh or canned pineapple pieces
  • 1 red onion, peeled and cut into pieces
  • 1 green bell pepper, deseeded and cut into 1-inch pieces

Instructions

  1. Preheat your cast-iron grill pan or outdoor grill to medium-high heat for perfect char.
  2. In a small saucepan, combine pineapple juice, fresh lemon juice, lime juice, minced ginger, diced jalapeo, soy sauce, honey, and chopped cilantro. Simmer over medium-high heat until reduced by half, creating a glossy, irresistible glaze that packs a spicy punch.
  3. Thread shrimp onto 8 steel skewers (or soak bamboo skewers in water for 20+ minutes first), alternating with juicy pineapple chunks, red onion pieces, and green bell pepper squares for vibrant flavor in every bite.
  4. Brush or drizzle the pineapple glaze over the kebabs. Grill 3 minutes per side until shrimp turn opaque and tantalizingly translucent, basting with more glaze for caramelized perfection. Serve hot and watch them disappear!
