Brown Stew Fish Recipe

Ingredients

  • 1 whole snapper
  • 1/2 onion, sliced into rings
  • 1 Scotch bonnet pepper, kept whole
  • 1 sprig thyme
  • 1/2 cup water
  • 1/4 cup olive oil
  • 3 tablespoons fish and meat sauce
  • 1 tomato, chopped
  • Salt and freshly ground black pepper

Instructions

  1. Warm a deep-fryer to 350F.
  2. Fry the whole snapper in hot oil until lightly golden, roughly 4 minutes.
  3. In a large saut pan, saut the onion rings, Scotch bonnet, thyme, 1/2 cup water, and olive oil for about 2 minutes.
  4. Stir in the fish and meat sauce, as well as the fried fish. Let it simmer for 5 minutes, then add the diced tomato and let cook for an additional minute.
  5. Adjust the salt and black pepper to your taste, then transfer to a serving plate.
