Brown Stew Fish Recipe

Ingredients
- 1 whole snapper
- 1/2 onion, sliced into rings
- 1 Scotch bonnet pepper, kept whole
- 1 sprig thyme
- 1/2 cup water
- 1/4 cup olive oil
- 3 tablespoons fish and meat sauce
- 1 tomato, chopped
- Salt and freshly ground black pepper

Instructions
- Warm a deep-fryer to 350F.
- Fry the whole snapper in hot oil until lightly golden, roughly 4 minutes.
- In a large saut pan, saut the onion rings, Scotch bonnet, thyme, 1/2 cup water, and olive oil for about 2 minutes.
- Stir in the fish and meat sauce, as well as the fried fish. Let it simmer for 5 minutes, then add the diced tomato and let cook for an additional minute.
- Adjust the salt and black pepper to your taste, then transfer to a serving plate.
