Ingredients

  • 2 cups blueberry preserves
  • 1/4 teaspoon chipotle powder
  • Zest and juice of 1/2 an orange
  • 3 tablespoons whole-grain mustard, divided
  • Kosher salt and freshly ground black pepper, to taste
  • 1 pork tenderloin (approximately 1 1/2 pounds)

Instructions

  1. Fire up a medium saucepan over high heat and whisk together the blueberry preserves, chipotle powder, orange zest and juice, plus 2 tablespoons of mustard. Season boldly with salt and pepper. Reduce heat, simmer while stirring occasionally, until berries burst and sauce thickens into a glossy glazeabout 10-15 minutes. Pour into a bowl and set aside, dreaming of that sweet-spicy kick.
  2. Preheat your broilerit's time to make magic!
  3. Slather the pork tenderloin with the remaining 1 tablespoon mustard, then season generously with salt and pepper. Place on a wire rack over a foil-lined sheet pan, 5-6 inches from the heat.
  4. Broil the pork, flipping every 3-5 minutes, until it hits 145F in the thickest partaround 15-20 minutes. Rest on a cutting board, tented loosely with foil, for 5 minutes to lock in those juices.
