Ingredients:
- Handful of walnut halves, about 3 to 4 tablespoons
- 3 tablespoons extra-virgin olive oil
- 1/2 small red onion, finely diced
- 1/3 cup whole milk
- 2/3 cup feta cheese crumbles
- 1 tablespoon freshly chopped marjoram or oregano, or 1 teaspoon dried
- Several sprigs of mint, leaves chopped
- Salt and freshly ground black pepper
- 1 1/2 pounds ground lamb
- 1 teaspoon paprika or smoked paprika
- A few pinches ground cinnamon
- 1 garlic clove, crushed
- 2 bunches farm-fresh spinach leaves, stemmed, washed, and dried
- Freshly grated nutmeg
- Ciabatta rolls or sliced crusty bread, toasted
Instructions
- Toast the walnuts in a dry skillet over medium heat until fragrant and golden. Transfer to a plate to cool.
- In the same pan, heat 1/2 tablespoon extra-virgin olive oil. Saut the diced onions for about 5 minutes until soft and translucent. Move to a mixing bowl to cool.
- While onions cool, blend milk, feta, half the marjoram or oregano, mint, salt, pepper, and toasted walnuts in a food processor until creamy and smooth.
- Mix ground lamb with cooled onions, salt, pepper, remaining marjoram or oregano, paprika, and cinnamon. Form into 4 patties with thinner centers and thicker edges. Heat 1/2 tablespoon oil in a nonstick skillet over medium-high. Cook patties 3-4 minutes per side for a juicy pink center.
- In another skillet, heat 2 tablespoons oil over medium-low. Infuse with crushed garlic for 1-2 minutes, then add spinach. Wilt quickly, season with salt, pepper, and nutmeg.
