Ingredients

  • 2 ounces Vietnamese or Thai rice noodles
  • 6 rice paper wrappers
  • 1/4 cup (about 12) fresh Thai basil leaves (or regular basil), rinsed and dried
  • 6 medium shrimp, cooked and cut in half
  • 1/2 cup shredded carrot
  • 1/2 cup (about 12) fresh large mint leaves, rinsed and dried
  • 3 red leaf lettuce leaves, ribs removed and each leaf halved (6 halves total)
  • Vinegar Dipping Sauce (see recipe below)

Vinegar Dipping Sauce

  • 1 tablespoon sugar
  • 2 teaspoons warm water
  • 1/4 cup rice vinegar
  • 1 teaspoon chili sauce (suggestion: Sriracha)
  • 1 tablespoon lime juice
  • 1 teaspoon fish sauce or low-sodium soy sauce
  • 1 tablespoon finely shredded carrot
  • 1 scallion, thinly sliced

Instructions

  • Bring a pot of water to a boil and cook the rice noodles according to package instructions. Drain, rinse with cold water, and let cool (about 2 cups cooked).
  • Arrange all fillings in separate small bowls for easy access. Fill a large bowl or deep pan with very warm water. Dip one rice paper wrapper into the water and soak about 30 seconds to 1 minute until soft and flexible with the pattern faintly visible. Remove and place on a clean, slightly moist kitchen towel.
  • On the softened wrapper, starting about 1 inch from one edge, layer 2 basil leaves (leaving ~1 inch margin on each side), about 1/4 cup cooked noodles, 2 shrimp halves, ~2 tablespoons shredded carrot, and 2 mint leaves. Place one piece of lettuce over the filling.
  • Fold the wrapper edge over the ingredients, tuck in, fold the sides inward, and roll tightly to finish. Repeat with remaining wrappers. Keep finished rolls covered with a damp cloth or paper towel until serving.
  • When serving, slice each roll in half and present upright with the dipping sauce on the side.

Vinegar Dipping Sauce Method

  • Stir the sugar into the warm water until dissolved.
  • Mix the sugar water with rice vinegar, chili sauce, lime juice, fish sauce or soy sauce, shredded carrot, and sliced scallion.
  • Chill the sauce until ready to serve.
