Ingredients:

  • 2 to 4 Pacific albacore loins
  • Kosher salt
  • Light brown sugar

Instructions:

  1. Rinse the albacore loins and pat them dry. Cut each loin into pieces weighing between 6 to 8 ounces. Generously sprinkle kosher salt over every surface of each piece. Next, coat the fish with light brown sugar, working the salt and sugar into all the nooks and crevices. Smoke the albacore at 170F for about 2 to 3 hours, using a mix of apple and oak wood chips for that perfect smoky flavor.
