Fire up your grill for this irresistible Grilled Mahi-Mahi with Mojotender, perfectly seared fillets bursting with flavor, coated in a zesty, garlicky sauce made with fresh lime juice in place of sour oranges. It's an easy weeknight winner that'll transport your taste buds to the tropics!
- 2 cloves garlic, minced
- 2 tablespoons extra-virgin olive oil, plus more for grilling
- 1/4 cup fresh lime juice (from about 2 limes)
- 1/2 teaspoon kosher salt
- 2 tablespoons chopped fresh cilantro leaves, plus 2 sprigs for garnish
- Two mahi-mahi fillets, 5 to 6 ounces each
- Kosher salt and freshly ground black pepper, to taste
- Mixed greens, for serving
1. In a small microwave-safe bowl, combine garlic and 2 tablespoons olive oil. Cover with plastic wrap and microwave on high for 1-2 minutes until fragrant and softened. (Or gently heat in a saucepan over medium.) Stir in lime juice, chopped cilantro, and salt. Let it meld while you grillpure magic in minutes!
2. Heat your outdoor grill to medium-high. Brush mahi-mahi fillets with olive oil and season generously with salt and pepper. Place skin-side down; grill undisturbed 5 minutes until it releases easily with gorgeous grill marks (lift a corner to checkpatience pays off!). Flip and grill another 5 minutes until firm and flaky.
