Quick-Pickled Chile-Orange Fennel

Ingredients
- Kosher salt
- 1 cup white wine vinegar
- 3 tablespoons sugar
- 3 dried chiles de arbol
- 1 smashed garlic clove
- 1 fennel bulb, quartered and thinly sliced through the core, plus several fennel fronds
- 1 wide strip of orange zest

Instructions
- In a small saucepan over medium-high heat, combine 1 1/2 cups water with 2 tablespoons kosher salt and heat until the salt dissolves.
- Stir in the white wine vinegar, sugar, dried chiles, and smashed garlic. Bring to a boil, stirring occasionally, for 1 to 2 minutes until sugar and salt fully dissolve.
- Pack the sliced fennel, fennel fronds, and orange zest into the 1-quart jar. Pour the hot brine over to fully submerge (use only what you need). Cool to room temperature (about 30 minutes), then cover and refrigerate for at least 6 hours or up to 2 weeks for peak flavor.
