Crisp Pretzel-Crusted Turkey Cutlets with Maple Sweet Potatoes

Ingredients
- 4 sweet potatoes (approximately 6 ounces each)
- 2 cups small pretzels, crushed
- 1 pound turkey cutlets, cut in half lengthwise
- 1 1/2 teaspoons paprika
- Kosher salt and freshly ground black pepper
- 2 tablespoons Dijon or brown mustard
- 1 teaspoon chopped fresh thyme
- 3 tablespoons vegetable oil
- 1 tablespoon unsalted butter, melted
- 3 tablespoons pure maple syrup
- 1 tablespoon chopped fresh chives

Instructions
- Pierce the sweet potatoes all over with a fork. Microwave until tender, about 10 minutes; cover to keep warm.
- Spread crushed pretzels on a shallow plate. Season turkey cutlets with 1 teaspoon paprika, 1/4 teaspoon salt, and black pepper. Brush one side of each with 1 tablespoon mustard, sprinkle with thyme, and coat pretzel-side down in crumbs for irresistible crunch.
- Heat 1 1/2 tablespoons vegetable oil in a large nonstick skillet over medium-high. Cook half the cutlets, pretzel-side down, until golden and crisp, 2 minutes. Flip and cook 1 minute more. Transfer to a plate. Wipe skillet, add remaining oil, and repeatpure magic in every bite!
- Stir melted butter, 1 tablespoon maple syrup, and remaining 1/2 teaspoon paprika. Slice open sweet potatoes, top with mixture, fluff, season with salt, and garnish with chives.
