Ingredients
- 2 large russet potatoes
- 2 shallots, finely minced (about 4 tablespoons)
- 2 garlic cloves, minced (1 tablespoon)
- 4 eggs, beaten lightly
- 2 tablespoons all-purpose flour
- 1 teaspoon dried tarragon
- 2 teaspoons fresh chives, chopped
- 1 teaspoon dried mustard
- 2 teaspoons salt
- Freshly ground black pepper to taste
- 1/2 cup vegetable oil
- Fresh chives for garnish
- Cranberry Jam (see recipe below)
Cranberry Jam Ingredients
- 1 cup sugar
- 1/2 cup cranberry juice
- 1 (12-ounce) package frozen cranberries
- 1 1/2 teaspoons ground cardamom
- 1 star anise
- Pinch of salt
- Pinch of white pepper
Instructions
- Discover the joy of crispy, golden latkes! Rinse the potatoes, then grate them using the coarse side of a grater. Transfer the grated potatoes into a clean kitchen towel and squeeze out all excess moisture. Place the dried grated potatoes into a large mixing bowl.
- Add the minced shallots, garlic, beaten eggs, flour, tarragon, chives, mustard, salt, and black pepper to the bowl. Mix everything together until thoroughly combined for irresistible flavor in every bite.
- Pour 1/4 cup of vegetable oil into an 8-inch skillet and heat over medium-high flame for about 2 minutes, ready for frying perfection.
- Spoon a heaping tablespoon of the latke mixture into the hot oil and gently press it down to flatten slightly. Add three more latkes to the pan, fry for 2 to 3 minutes until golden brown, then carefully flip and cook until the other side is equally golden.
- Remove the cooked latkes and place them on a plate lined with paper towels to absorb any excess oil. Continue frying the remaining batter, adding more oil halfway through cooking if needed.
- To keep warm, place finished latkes in a low-heat oven until all are ready to serve. Garnish with fresh chives and serve alongside the vibrant cranberry jam for a festive, mouthwatering treat!
Cranberry Jam Preparation
- Create this zesty, aromatic jam! Combine all the jam ingredients in a medium-sized saucepan. Bring to a boil over high heat while stirring until the sugar fully dissolves.
- Lower the heat and let the mixture simmer, stirring occasionally, until the cranberries burst and the jam thickens, about 10 minutespure holiday magic in a pot.
- Remove the saucepan from heat and allow the jam to cool. Chill thoroughly in the refrigerator before serving.
- Yield: Approximately 3 cups of cranberry jam.
