  • 1 teaspoon dried mustard
  • 2 teaspoons salt
  • Freshly ground black pepper to taste

Cranberry Jam Ingredients

  • 1 cup sugar
  • 1/2 cup cranberry juice
  • 1 (12-ounce) package frozen cranberries
  • 1 1/2 teaspoons ground cardamom
  • 1 star anise
  • Pinch of salt
  • Pinch of white pepper

Instructions

  1. Discover the joy of crispy, golden latkes! Rinse the potatoes, then grate them using the coarse side of a grater. Transfer the grated potatoes into a clean kitchen towel and squeeze out all excess moisture. Place the dried grated potatoes into a large mixing bowl.
  2. Add the minced shallots, garlic, beaten eggs, flour, tarragon, chives, mustard, salt, and black pepper to the bowl. Mix everything together until thoroughly combined for irresistible flavor in every bite.
  3. Pour 1/4 cup of vegetable oil into an 8-inch skillet and heat over medium-high flame for about 2 minutes, ready for frying perfection.
  4. Spoon a heaping tablespoon of the latke mixture into the hot oil and gently press it down to flatten slightly. Add three more latkes to the pan, fry for 2 to 3 minutes until golden brown, then carefully flip and cook until the other side is equally golden.
  5. Remove the cooked latkes and place them on a plate lined with paper towels to absorb any excess oil. Continue frying the remaining batter, adding more oil halfway through cooking if needed.
