Ingredients
- 1 pineapple, sliced and grilled or roasted until tender, then diced
- 1 small red onion, finely chopped
- 2 green onions, thinly sliced
- to 1 habanero chili, finely minced
- 2 teaspoons freshly grated ginger
- Juice of 1 lime
- A splash of canola oil
- Kosher salt and freshly ground black pepper to taste
- Corn tortilla or plantain chips, for serving
Instructions
- In a large bowl, combine the grilled pineapple, red onion, green onions, minced habanero, grated ginger, and lime juice. Drizzle with canola oil and season generously with kosher salt and freshly cracked black pepper to taste. Gently toss until all ingredients are well combined.
- Transfer to a serving bowl and let sit for 5 minutes to allow the flavors to meld. Serve immediately with crispy corn tortilla or plantain chips for dipping.
