Ingredients
- Nonstick cooking spray, for greasing the pan
- 1 1/2 cups powdered sugar
- 1 1/2 cups crushed graham crackers
- 1 cup smooth peanut butter
- Kosher salt
- 1 stick (8 tablespoons) unsalted butter, melted
- 8 ounces semisweet baking chocolate, chopped finely
- 1 cup heavy cream
- 1 teaspoon flaky sea salt, optional
Cooking Instructions
- Spray an 8-by-8-inch baking pan with nonstick spray on all sides.
- In a large bowl, mix together the powdered sugar, graham cracker crumbs, peanut butter, 1/8 teaspoon kosher salt, and melted butter. Press this mixture firmly into the prepared pan and set it aside.
- In a medium bowl, combine the chopped chocolate with 1/8 teaspoon kosher salt. Heat the heavy cream in a small saucepan until small bubbles form around the edges, then pour it over the chocolate. Let it sit for 1 minute before whisking until completely smooth and melted.
- Spread the chocolate ganache evenly over the peanut butter base. Place the pan in the refrigerator and chill until the ganache is firm, at least 45 minutes or refrigerate overnight.
- If using, sprinkle the flaky sea salt over the top evenly. Slice into squares and serve.
