Ingredients

  • Nonstick cooking spray, for greasing the pan
  • 1 1/2 cups powdered sugar
  • 1 1/2 cups crushed graham crackers
  • 1 cup smooth peanut butter
  • Kosher salt
  • 1 stick (8 tablespoons) unsalted butter, melted
  • 8 ounces semisweet baking chocolate, chopped finely
  • 1 cup heavy cream
  • 1 teaspoon flaky sea salt, optional

Cooking Instructions

  1. Spray an 8-by-8-inch baking pan with nonstick spray on all sides.
  2. In a large bowl, mix together the powdered sugar, graham cracker crumbs, peanut butter, 1/8 teaspoon kosher salt, and melted butter. Press this mixture firmly into the prepared pan and set it aside.
  3. In a medium bowl, combine the chopped chocolate with 1/8 teaspoon kosher salt. Heat the heavy cream in a small saucepan until small bubbles form around the edges, then pour it over the chocolate. Let it sit for 1 minute before whisking until completely smooth and melted.
  4. Spread the chocolate ganache evenly over the peanut butter base. Place the pan in the refrigerator and chill until the ganache is firm, at least 45 minutes or refrigerate overnight.
  5. If using, sprinkle the flaky sea salt over the top evenly. Slice into squares and serve.
