Ingredients:

  • 1 cup shelled walnuts
  • 1/4 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 3/4 cup light brown sugar
  • 5 large eggs
  • 1/2 cup honey
  • 1/2 cup fresh orange juice
  • 1 teaspoon vanilla extract
  • Fresh berries for serving

Instructions:

  1. Preheat your oven to 350F and generously butter and flour a 9-inch round cake pan. In a food processor, pulse together the walnuts, flour, baking powder, salt, and cinnamon until finely ground. Add the brown sugar and eggs, blending until smooth. Pour into the prepared pan for a nutty delight.
  2. Bake 30-35 minutes until a toothpick comes out clean. Cool in the pan on a wire rack for 5 minutes, then invert onto the rack to cool completelypatience builds anticipation!
  3. For the irresistible glaze, simmer honey, orange juice, and vanilla in a saucepan over medium-low heat until boiling. Prick the cooled cake with a toothpick and brush generously, letting it soak in the citrusy sweetness.
