Honey Glazed Walnut Cake

Ingredients:
- 1 cup shelled walnuts
- 1/4 cup all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 3/4 cup light brown sugar
- 5 large eggs
- 1/2 cup honey
- 1/2 cup fresh orange juice
- 1 teaspoon vanilla extract
- Fresh berries for serving
Instructions:
- Preheat your oven to 350F and generously butter and flour a 9-inch round cake pan. In a food processor, pulse together the walnuts, flour, baking powder, salt, and cinnamon until finely ground. Add the brown sugar and eggs, blending until smooth. Pour into the prepared pan for a nutty delight.
- Bake 30-35 minutes until a toothpick comes out clean. Cool in the pan on a wire rack for 5 minutes, then invert onto the rack to cool completelypatience builds anticipation!
- For the irresistible glaze, simmer honey, orange juice, and vanilla in a saucepan over medium-low heat until boiling. Prick the cooled cake with a toothpick and brush generously, letting it soak in the citrusy sweetness.
