Ingredients
- 2 garlic cloves, minced
- 1/2 Vidalia onion, finely chopped
- 1 1/2 pounds ground turkey
- 2 teaspoons Dijon mustard
- 1 teaspoon soy sauce
- Kosher salt and fresh black pepper
- 8 pieces pepper jack cheese (from an 8-ounce block), sliced
- 1 beefsteak tomato, cut into 3/4-inch thick slices
- Olive oil
- 4 big onion buns or sandwich rolls
- Spicy Mayo (recipe below)
- Lettuce leaves
Spicy Mayo Sauce
- 1/2 cup mayonnaise
- 2 tablespoons hot chili sauce (Sriracha suggested)
- Juice of half a lime
Instructions
- Preheat your grill to medium-high heat.
- In a large mixing bowl, combine the minced garlic, chopped onion, ground turkey, Dijon mustard, soy sauce, and season with kosher salt and fresh black pepper; mix thoroughly with a wooden spoon. Divide the mixture into 8 equal portions and flatten each into a thin patty.
- Place 2 slices of pepper jack cheese on 4 patties, then top each with another patty. Press and seal the edges firmly so the cheese stays inside while cooking.
- Sprinkle tomato slices with a little salt and pepper and brush with olive oil. Grill tomatoes about 2 minutes per side, then transfer to a plate. Toast the buns briefly on the grill and set aside.
- Grill the stuffed turkey burgers 56 minutes per side or until cooked through. Assemble burgers on toasted buns and top with spicy mayo, lettuce, and grilled tomato slices.
Spicy Mayo Sauce Quick Prep
- Mix the mayonnaise, chili sauce, and lime juice in a small bowl until smooth and combined.
