Whip up this decadently creamy Oyster Stew in just 35 minutesa cozy, luxurious treat that's surprisingly easy to make at home. Fresh oysters meet velvety heavy cream for an irresistible dish that'll warm your soul and impress your guests!

Ingredients:

  • 4 cups heavy cream
  • 1 pint oysters and their liquor, separated
  • 1 tablespoon unsalted butter
  • 1/2 cup finely diced celery
  • 1/2 cup finely diced onion
  • 1 teaspoon celery seed
  • 1 1/2 teaspoons hot pepper sauce
  • 1 tablespoon lemon juice
  • 2 tablespoons freshly chopped parsley, chervil, or chives
  • Salt and pepper to taste

Instructions:

  1. In a sturdy 2-quart saucepan over medium heat, combine the heavy cream with the oyster liquor and bring just to a simmer. Remove from heat.
  2. Meanwhile, melt the butter in a large saut pan over medium heat. Add celery with a pinch of salt and soften gently for 3-4 minutes. Stir in onion and cook until translucent, about 4-5 minutes. Add celery seed, hot pepper sauce, and oysters; cook 1-2 minutes until oyster edges curl.
  3. Transfer oysters to a blender; add just enough cream from the pot to cover them. Blend until smooth. Return remaining cream to medium heat, stir in the blended mixture, and warm through.
  4. Just before serving, stir in lemon juice and fresh herbs. Season with salt and pepper to taste. Serve hot and savor every silky spoonful!
  5. Safety tip for blending hot liquids: Cool mixture for at least 5 minutes. Fill blender no more than half full. Leave one corner of lid open, cover with a towel, pulse, then blend on high until smooth.
