Mini Brownie Bites with Orange Cream Cheese Frosting

Ingredients
- 1 1/2 sticks unsalted butter
- 4 ounces semisweet chocolate, chopped
- 1 cup granulated sugar
- 2 large eggs
- 1/4 teaspoon salt
- 1/4 teaspoon vanilla extract
- 1/3 cup all-purpose flour
Cream Cheese Frosting
- 1/2 stick butter, at room temperature
- 8 ounces cream cheese, softened
- 4 cups powdered sugar
- 3 tablespoons fresh orange juice
- 1 tablespoon orange zest
Instructions
- Preheat the oven to 350F.
- Line an 88-inch baking pan with aluminum foil, letting the edges hang over about 2 inches, and lightly coat with nonstick spray.
- In a sturdy saucepan over medium heat, melt the butter and chopped chocolate, stirring until smooth.
- Remove from heat and stir in the sugar, eggs, salt, and vanilla; whisk until smooth. Add the flour and stir just until combined. Pour the batter into the prepared pan.
- Bake for 30 minutes. Transfer the pan to a wire rack and let the brownies cool completely.
- For the frosting: Using a hand mixer, beat the butter and cream cheese until pale and fluffy. Add the powdered sugar and beat until incorporated. Mix in the orange juice and zest until the frosting is smooth.
- Lift the cooled brownies from the pan using the foil overhang and cut out 1-inch circles with a round cutter. Spoon the frosting into a piping bag fitted with a large star tip and pipe onto each brownie bite.
