Create a flavorful Indian-inspired snack by coating cashews with garam masala, curry powder, and coconut flakes, then roasting them until crunchy and golden.
Masala Spice Blend:
- 1/4 cup unsweetened flaked coconut
- 3 tablespoons sugar
- 2 teaspoons garam masala
- 1 teaspoon curry powder
- 1/2 teaspoon ground turmeric (optional)
- Kosher salt
Cashews:
- Vegetable or canola oil, for greasing the baking sheet
- 1 large egg white
- 4 cups unsalted raw cashews
Instructions:
- Combine the coconut, sugar, garam masala, curry powder, turmeric (if using), and 1 1/2 teaspoons kosher salt in a small bowl; set the spice blend aside.
- Preheat the oven to 350F (175C). Lightly grease a rimmed baking sheet with oil.
- In a large bowl, whisk the egg white until frothy. Add the cashews and toss to coat evenly with the egg white. Sprinkle the prepared spice blend over the nuts and toss until thoroughly coated.
- Spread the spiced cashews in a single layer on the baking sheet. Bake 1520 minutes, stirring occasionally, until golden and crisp.
