Guava Glazed Pulled Pork
This vibrant, citrus-infused pulled pork brings bold Caribbean flavors to your table. The sweet and tangy guava glaze caramelizes beautifully on tender, slow-cooked pork, while the zesty slaw and creamy chipotle mayo add layers of complexity to every bite.
For the Pork:
- One 4-pound boneless pork shoulder
- 3/4 cup canola oil
- 1/2 cup fresh oregano leaves
- 10 cloves garlic, finely minced
- Kosher salt and freshly ground black pepper
- 1 1/2 cups guava jelly
- 1/4 cup Dijon mustard
- 1/4 cup freshly squeezed orange juice
- 2 tablespoons fresh lime juice
For Serving:
- 16 warmed corn tortillas
- Chipotle Mayonnaise (recipe below)
- Sour Orange, Red Cabbage and Jicama Slaw (recipe below)
- Fresh cilantro leaves, for garnish
Chipotle Mayonnaise
- 3/4 cup mayonnaise
- 2 tablespoons chipotles pureed in adobo sauce
- Juice of half a lime
Sour Orange, Red Cabbage and Jicama Slaw
- 1/2 cup fresh orange juice
- 1/4 cup fresh lime juice
- 2 tablespoons honey
- 1 tablespoon granulated sugar
- 1/2 jicama, shredded using the large holes of a box grater
- 1/2 small red onion, shredded on the large holes of a box grater
- 1/4 head red cabbage, shredded on the large holes of a box grater
- 1 large carrot, shredded on the large holes of a box grater
- 3 tablespoons chopped fresh cilantro
- Salt and freshly ground black pepper to taste
