Guava Glazed Pulled Pork

This vibrant, citrus-infused pulled pork brings bold Caribbean flavors to your table. The sweet and tangy guava glaze caramelizes beautifully on tender, slow-cooked pork, while the zesty slaw and creamy chipotle mayo add layers of complexity to every bite.

For the Pork:

  • One 4-pound boneless pork shoulder
  • 3/4 cup canola oil
  • 1/2 cup fresh oregano leaves
  • 10 cloves garlic, finely minced
  • Kosher salt and freshly ground black pepper
  • 1 1/2 cups guava jelly
  • 1/4 cup Dijon mustard
  • 1/4 cup freshly squeezed orange juice
  • 2 tablespoons fresh lime juice

For Serving:

  • 16 warmed corn tortillas
  • Chipotle Mayonnaise (recipe below)
  • Sour Orange, Red Cabbage and Jicama Slaw (recipe below)
  • Fresh cilantro leaves, for garnish

Chipotle Mayonnaise

  • 3/4 cup mayonnaise
  • 2 tablespoons chipotles pureed in adobo sauce
  • Juice of half a lime

Sour Orange, Red Cabbage and Jicama Slaw

  • 1/2 cup fresh orange juice
  • 1/4 cup fresh lime juice
  • 2 tablespoons honey
  • 1 tablespoon granulated sugar
  • 1/2 jicama, shredded using the large holes of a box grater
  • 1/2 small red onion, shredded on the large holes of a box grater
  • 1/4 head red cabbage, shredded on the large holes of a box grater
  • 1 large carrot, shredded on the large holes of a box grater
  • 3 tablespoons chopped fresh cilantro
  • Salt and freshly ground black pepper to taste
