- 5 fresh sage leaves

- 2 ounces Green Tea-Infused Vodka, recipe below
- 3/4 ounce fresh lemon juice
- 3/4 ounce Honey Peach Syrup, see recipe below
- 2 dashes bitters (suggested: Angostura)
- Ice cubes (for shaking)
- Splash of club soda
- 1 bar spoon of freshly mashed peaches (for garnish)
Honey Peach Syrup:
- 1/2 cup honey
- 1/2 cup fresh peach juice
Green Tea-Infused Vodka:
- 1 bottle vodka (Haute Vodka recommended)
- 5 bags of green tea (Bigelow recommended)
- Place one fresh sage leaf in a small mason jar and press lightly; avoid muddling. Add shaved ice on top.
- Combine the Green Tea-Infused Vodka, lemon juice, Honey Peach Syrup, and bitters in a metal cocktail shaker. Fill with ice cubes, cover tightly, and shake well.
- Add more shaved ice and 3 additional sage leaves to the mason jar. Strain the shaken mixture into the jar.
- Top with additional shaved ice and stir gently. Add a splash of club soda just up to the jar's neck.
- Finish by adding more shaved ice and garnish with mashed fresh peaches and the remaining sage leaf.
