  • 5 fresh sage leaves
  • Shaved ice
  • 2 ounces Green Tea-Infused Vodka, recipe below
  • 3/4 ounce fresh lemon juice
  • 3/4 ounce Honey Peach Syrup, see recipe below
  • 2 dashes bitters (suggested: Angostura)
  • Ice cubes (for shaking)
  • Splash of club soda
  • 1 bar spoon of freshly mashed peaches (for garnish)

Honey Peach Syrup:

  • 1/2 cup honey
  • 1/2 cup fresh peach juice

Green Tea-Infused Vodka:

  • 1 bottle vodka (Haute Vodka recommended)
  • 5 bags of green tea (Bigelow recommended)
Instructions:
  1. Place one fresh sage leaf in a small mason jar and press lightly; avoid muddling. Add shaved ice on top.
  2. Combine the Green Tea-Infused Vodka, lemon juice, Honey Peach Syrup, and bitters in a metal cocktail shaker. Fill with ice cubes, cover tightly, and shake well.
  3. Add more shaved ice and 3 additional sage leaves to the mason jar. Strain the shaken mixture into the jar.
  4. Top with additional shaved ice and stir gently. Add a splash of club soda just up to the jar's neck.
  5. Finish by adding more shaved ice and garnish with mashed fresh peaches and the remaining sage leaf.
