Ingredients
- 2 sprigs fresh mint, plus extra for garnish
- Ice cubes
- 1 1/2 ounces Kentucky bourbon
- 3/4 ounces Lemongrass-Ginger Simple Syrup
- Cold club soda
- Lime
Lemongrass-Ginger Simple Syrup
Yield: 2 cups
- 6 stalks lemongrass
- 2 cups sugar
- One 1-inch piece of fresh ginger
Instructions
- Trim the lemongrass stalks to use only the bottoms. Crush them lightly with the back of a knife or a meat mallet to release their oils and fragrance.
- Combine the lemongrass, sugar, 2 cups of cold water, and the ginger slice in a medium saucepan. Heat over medium until the sugar dissolves. Lower the heat and let the mixture steep for 30 to 40 minutes, allowing the lemongrass and ginger to infuse the syrup thoroughly. Once aromatic, strain the syrup and set aside.
- Place the mint and ice into a cocktail shaker and muddle them together. Pour in the bourbon and the Lemongrass-Ginger Simple Syrup, then shake vigorously until well mixed.
- Serve over ice in a Collins glass. Top off with club soda, add a squeeze of lime juice, and garnish with a sprig of mint.
