Whip up this irresistible Chili Mac tonight a hearty, flavor-packed dish that's easy to make and perfect for feeding a crowd!

Ingredients:

  • 1 pound corkscrew shaped pasta with lines or elbows with lines
  • 2 pounds ground sirloin
  • 2 tablespoons (2 turns around the pan in a slow stream) extra-virgin olive oil
  • 1 sweet onion, chopped
  • 2 jalapeno peppers, seeded and chopped
  • 4 cloves garlic, chopped
  • 3 tablespoons (1 1/2 palmfuls) dark chili powder
  • 2 tablespoons (1 palmful) cumin
  • 2 tablespoons cayenne pepper sauce
  • Coarse salt
  • 1 cup beer or beef broth
  • 1 (28-ounce) can diced tomatoes in juice
  • 1 (14-ounce) can crushed tomatoes
  • Chopped scallions, for garnish

Instructions:

  1. Bring a large pot of salted water to a boil and cook pasta until al dente tender but with a bite!
  2. Meanwhile, in a large deep pot, heat oil over medium-high and brown the beef. Stir in onion, jalapeos, and garlic. Season boldly with chili powder, cumin, cayenne, and salt. Saut 5 minutes, then pour in beer or broth. Let it bubble and reduce by half in 2 minutes. Add tomatoes and simmer 10 minutes for maximum flavor.
  3. Drain pasta and toss it hot into the chili pot, coating every noodle in that spicy goodness. Serve generous portions topped with fresh chopped scallions. Dig in and enjoy the comfort!
