Transform sweet Italian sausage into a flavorful gyro twist! Seasoned with cumin and oregano, it's grilled to perfection and wrapped in warm flatbread with crisp lettuce, juicy tomatoes, and a creamy, zesty yogurt sauce. Ingredients
- 12 ounces sweet Italian sausage (about 4 links)
- 2 teaspoons ground cumin
- 1 teaspoon dried oregano
- 1 tablespoon extra-virgin olive oil
- 2 tomatoes, chopped
- 4 medium romaine leaves, chopped (about 2 cups)
- 1/2 cup Greek yogurt
- 1 teaspoon lemon juice
- 1/2 teaspoon harissa
- Kosher salt
- Four 6-inch round flatbreads, such as pocket-less pita

- Heat a cast-iron grill pan or griddle over medium-high heat.
- Cut the sausages lengthwise and open them out flat. Remove the casings and press the sausages down to about 1/4 inch thick. Mix the cumin and oregano in a small bowl. Rub the spice blend onto the cut side of the sausages. Brush the hot pan with oil and place the sausages in, seasoned-side down. Cook each side until browned and fully cooked, about 3 to 4 minutes per side.
- In a medium bowl, combine the chopped tomatoes and their juice with the lettuce. In another bowl, whisk together the yogurt, lemon juice, harissa, and 1/4 teaspoon salt until smooth.
- Warm each flatbread in a dry skillet for about 30 seconds per side. Spread a layer of the yogurt sauce on each bread, then add the tomato-lettuce mixture and sausage. Serve any remaining sauce alongside.
