  • 8 ounces button mushrooms, trimmed and sliced
  • Kosher salt and freshly ground black pepper
  • 1 shallot, thinly sliced
  • 2 teaspoons thyme leaves
  • 8 ounces orzo (about 1 1/3 cup)
  • 3 cups low-sodium chicken broth
  • Zest and juice of 1 lemon
  • 2 frozen chicken breasts (6 ounces each)
  • 8 cups baby spinach (about 6 ounces)
  • 1/4 cup heavy cream
  • 1/4 cup grated Parmesan

Directions

  1. Select high saute on a 6-quart pressure cooker and melt the butter (see Cook's Note). After melting, add mushrooms, a pinch of salt, and grinds of pepper; cook until browned and liquid evaporates, around 6 minutes. Add shallots and thyme, cooking until softened, about 2 minutes. Mix in orzo, broth, lemon zest, and juice. Place chicken breasts over orzo, season with 1 teaspoon salt and pepper grinds.
  2. Secure lid per device instructions and set to high pressure for 10 minutes.
  3. Once cycle ends, allow natural release for 10 minutes per guide. Carefully release remaining steam and open lid.
  4. Use tongs to move chicken to a board and slice. Fold spinach, cream, and Parmesan into orzo. Adjust with 1/2 teaspoon salt and pepper, then serve with chicken.
