Ingredients

  • 1 cup shortbread cookies
  • 1 cup freeze-dried strawberries
  • 1/2 cup puffed rice cereal
  • 1 tablespoon unsalted butter, melted
  • Kosher salt (pinch)
  • 24 vanilla cupcakes with frosting
  • Fresh strawberry slices, for topping

Directions

  1. Place the shortbread cookies in a food processor and blend until fine and sandy.
  2. Add the freeze-dried strawberries and pulse to combine.
  3. Add the puffed rice cereal and blend briefly.
  4. Pour in the melted butter and a pinch of kosher salt, then blend until the mixture holds together when pressed.
  5. Spread the coating onto a plate. Gently press each frosted cupcake into the coating so the sides are well covered.
  6. Top each cupcake with a fresh strawberry slice and serve.
