This oatmeal tastes like a cozy dessert for breakfast, combining toasted nuts, ripe banana, rich cocoa, and a few chocolate chips for a wholesome, indulgent start to the day.
Ingredients
- 2 cups plain almond milk
- 2 large ripe bananas (1 diced, thinly sliced)
- 1/4 teaspoon pure almond extract
- 1/4 teaspoon pure vanilla extract
- Pinch kosher salt
- 2 cups old-fashioned rolled oats
- 2 tablespoons unsweetened cocoa powder
- 2 tablespoons honey or agave nectar
- 1/3 cup toasted, chopped walnuts
- Pinch ground cinnamon
- 2 tablespoons semisweet chocolate chips
Instructions
- In a large saucepan over high heat, bring the almond milk, 1 3/4 cups water, diced bananas, almond and vanilla extracts, and a pinch of salt to a boil.
- Stir in the oats, cocoa powder, and 1 tablespoon honey. Reduce heat to medium and cook, stirring often, until oats reach desired texture, about 67 minutes.
- Divide the oatmeal among 4 bowls. Top each with sliced bananas, walnuts, the remaining tablespoon of honey, a sprinkle of cinnamon, and the chocolate chips, then serve.
