Ingredients
- 1 1/2 cups tomato sauce (homemade or jarred)
- 4 cloves garlic, finely chopped
- 1/2 cup green olives with pimentos, roughly chopped
- 3 tablespoons capers, rinsed and drained
- 1/2 cup dry red wine
- 2 teaspoons anchovy paste
- 4 halibut fillets, about 5 ounces each
- Kosher salt and freshly cracked black pepper
- 1/4 cup fresh basil, chopped
Instructions
- Pour the tomato sauce into a medium saucepan and stir in the garlic, olives, capers, wine, and anchovy paste.
- Bring to a gentle simmer over medium heat and cook about 5 minutes.
- Meanwhile, season the halibut fillets with salt and pepper on both sides.
- Place the halibut into the simmering sauce, cover, and cook 35 minutes, or until the fish flakes easily with a fork.
- Gently spoon sauce over the fillets, sprinkle with chopped basil, and serve.
Notes: Serve with crusty bread, pasta, or steamed vegetables. If you prefer, substitute black olives or different firm white fish such as cod or sea bass.
