Easy Baked Salmon in Foil Packets

  • 4 salmon fillets (about 5 ounces each)
  • 2 teaspoons olive oil plus an additional 2 tablespoons
  • Salt and freshly ground black pepper
  • 3 tomatoes, chopped, or 1 (14-ounce) can of drained chopped tomatoes
  • 2 shallots, chopped
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  1. Preheat your oven to 400 degrees Fahrenheit.
  2. Brush the salmon with 2 teaspoons of olive oil and season with salt and pepper. In a medium bowl, mix the tomatoes, shallots, 2 tablespoons of olive oil, lemon juice, oregano, thyme, and additional salt and pepper to combine.
  3. Place each salmon fillet, oiled side down, on a sheet of foil. Fold the ends of the foil around the salmon to create a spiral shape. Spoon the tomato mixture over each fillet. Fold the sides of the foil over the salmon and tomato mixture fully, sealing the packets tightly. Arrange the foil packets on a sturdy large baking sheet.
  4. Bake the salmon until it is just cooked through, approximately 25 minutes. Use a large metal spatula to transfer the foil packets onto plates and serve immediately.
