Ingredients

- 1 1/2 lbs large shrimp, peeled and deveined

- 1 cup sweetened shredded coconut

Zesty Dipping Sauce
- One 6-ounce jar orange marmalade
- 1/4 cup sweet Asian-style chili sauce
- Juice from 1 lime
Directions
- Heat peanut oil in a deep fryer or heavy pot to 350F. Butterfly the shrimp by slicing them open and set aside.
- Mix panko crumbs with shredded coconut in one bowl. Whisk eggs with a pinch of salt and pepper in another. Combine flour, onion powder, and garlic powder in a third bowl.
- Dredge each shrimp in seasoned flour, dip in egg mixture, then coat thoroughly in panko-coconut blend.
- Fry shrimp in hot oil in batches until golden and crisp, about 2-3 minutes per batch. Drain on paper towels and serve hot with Zesty Dipping Sauce.
