Ingredients:

  • 8 slices of stone-ground rye artisan bread, cut about 1/2 inch thick
  • 5 to 6 tablespoons unsalted butter, softened
  • 1/4 cup store-bought apple butter
  • 1 pound thinly sliced fresh roasted deli turkey
  • 1/2 pound brie cheese, sliced thickly
  • 1 bunch arugula, with stems removed

Instructions:

  1. Butter 4 bread slices with 1/2 tablespoon each, then spread 1 tablespoon apple butter on top. Pile on turkey slices, cover with 2-3 thick brie slices to blanket the turkey, and add 2-3 fresh arugula leaves. Butter the remaining slices and press buttered-side down onto the fillingsgive 'em a gentle squeeze to seal the magic.
  2. Heat a cast-iron skillet or heavy pan over medium-low. Melt the remaining tablespoon of butter to coat evenly. Fit in 2-4 sandwiches (don't crowd!), grilling 2-3 minutes until golden and gooey.
