Flavored Sugars

CITRUS SUGAR
- Zest of 1 lemon and 1 orange
- 1 cup granulated sugar
LAVENDER SUGAR
- 2 tablespoons dried lavender blossoms, stems removed
- 1 cup granulated sugar
AUTUMN SPICE SUGAR
- 2 or 3 allspice berries or 1/4 teaspoon ground allspice
- 2 or 3 coriander seeds or 1/4 teaspoon ground coriander
- 1/4 teaspoon ground cardamom
- 1/2 teaspoon cinnamon
- 1/4 teaspoon ground ginger
- 1 cup granulated sugar

CITRUS SUGAR
- Put the sugar into a mini food processor bowl. Carefully zest the lemon and orange using a fine grater. If you use a square grater, wrap it with plastic wrap to help remove all zest stuck on the grater. Scrape the zest into the sugar in the processor. Blend for 15 to 30 seconds to mix well.
- Store in a tightly closed glass jar. If the sugar becomes clumped, break it apart with a fork before use.
LAVENDER SUGAR
- Place the lavender blossoms in the bowl of a mini food processor or spice grinder. Process them to a fine powder. Add the sugar and pulse a few seconds to mix.
- Keep the mixture in a sealed glass jar. If hardened, crumble it using a fork before using.
AUTUMN SPICE SUGAR
- Put the spices into a mini food processor or spice grinder. Process until finely ground. Add sugar and pulse briefly to combine.
- Store in a sealed glass jar. If hardened, break it apart with a fork before use.
