Ingredients
2 tablespoons salad oil
4 skinless duck breasts
3 Granny Smith apples, peeled, cored, and finely diced
2 tablespoons raisins
1 teaspoon Chinese five-spice powder
1 teaspoon minced fresh garlic (about 1 clove)
1 teaspoon chopped red onion
2 teaspoons chopped fresh cilantro leaves
Salt and freshly ground black pepper, to taste
16 wonton wrappers
1/2 cup dipping sauce of your choice such as duck sauce, soy sauce, or Chinese hot sauce
Instructions
1. Heat the salad oil in a saut pan over high heat. Sear the duck breasts quickly until medium-rare, then remove and let cool. In the same pan, saut the diced apples, raisins, five-spice powder, garlic, and onion until tender. Off the heat, stir in cilantro and season with salt and pepper. Chop the cooled duck into small pieces, then mix thoroughly with the apple mixture.
2. Place a small spoonful of the duck-apple filling in the center of each wonton wrapper. Fold over, moisten the edges with water, and seal securely to keep the filling inside.
