Ingredients
- 1 1/2 pounds (6 sticks) unsalted butter, softened to room temperature
- 3 pounds confectioners' sugar
- 2 to 4 tablespoons milk
- 2 tablespoons pure vanilla extract or vanilla powder
- Pinch of sea salt
- 50 to 56 of your preferred cupcakes
Special Tools Needed:
- One 20-by-30-inch foam board
- Brown craft paper (larger than foam board)
- 2D piping tip with a piping bag
- Fresh flowers like silver dollar eucalyptus, bud roses, baby's breath, or any small flowers you love
Instructions
- Using a stand mixer fitted with a paddle attachment, beat the butter on high speed for 1 to 2 minutes until creamy and fluffy. Lower the speed and gradually incorporate the confectioners' sugar, alternating with milk one tablespoon at a time until the buttercream reaches the desired smoothness. Add vanilla and salt, then mix on medium-high speed for another minute to lighten the mixture. Transfer the buttercream into a piping bag fitted with the 2D tip and secure the end with a rubber band.
- Cover the foam board with brown craft paper if you wish. Begin arranging the cupcakes in the outline of a wedding dress by placing 7 cupcakes in a straight row at the bottom. Stack another row of cupcakes above this, continuing to build the dress shape. For the waist area, the center row should have 3 to 4 cupcakes. Near the neckline, arrange 6 to 7 cupcakes in a shape that mimics the scoop neckline. For the shoulders, place 1 or 2 cupcakes slightly overlapping the cupcakes at each end of the top row.
- Pipe buttercream roses over each cupcake starting from the center and moving outward clockwise. After completing the icing, lay greenery such as silver dollar eucalyptus along the "waist" and down the right side of the dress arrangement.
- Decorate the greenery by placing bud roses or your choice of small flowers on top. Fill any gaps with filler flowers like baby's breath to complete the elegant look.
