- 5 ounces soft caramel candies, 24 pieces, unwrapped
- 1/2 cup unsalted dry roasted peanuts
- 1/4 cup white chocolate chip morsels, about 2 handfuls
- 1 1/4 cups sweetened coconut flakes
- Vegetable cooking spray
Instructions
- Line an 8 by 8-inch microwave-safe square dish with plastic wrap, letting the wrap hang over the edges. Lightly spray the dish with cooking spray.
- Spray a medium microwave-safe bowl with cooking spray. Add the caramel candies, peanuts, white chocolate chips, and half a cup of coconut flakes. Stir to combine. Microwave on HIGH for 1 minute 30 seconds: cook for 1 minute, stop to stir, then continue microwaving for another 30 seconds. Remove and stir thoroughly. Transfer the mixture into the lined square pan and press it down evenly with a rubber spatula. Sprinkle the remaining coconut flakes on top, using the spatula to gently press them into the candy. If the top feels too firm for the coconut to stick, microwave the mixture for an additional 10 seconds, then press the coconut in again.
- Let the candies cool completely. Once set, lift the whole block out using the plastic wrap. Cut into small, 1-inch squares with a sharp knife.
