Chocolate Ganache Ingredients
- 1/4 cup heavy cream
- 4 ounces bittersweet chocolate chips
Butterscotch Pudding Ingredients
- 1/2 cup dark brown sugar
- 1/4 cup cornstarch
- 1/2 teaspoon kosher salt
- 1 cup heavy cream
- 1 cup whole milk
- 2 large egg yolks
- 1 tablespoon unsalted butter
- 1 teaspoon vanilla extract

Instructions
- To prepare the chocolate ganache: Heat the heavy cream in a small saucepan over medium-high heat until it just starts to simmer. Take it off the heat and add the bittersweet chocolate chips, stirring until the chocolate is fully melted and the mixture thickens. Distribute the ganache evenly into the 4 ramekins and set aside.
- To make the butterscotch pudding: Combine the brown sugar, cornstarch, and salt in a large saucepan over medium-high heat. Gradually whisk in the cream, milk, and egg yolks. Bring the mixture to a boil while stirring continuously until it thickens, about 2 minutes. Remove from heat, then mix in the butter and vanilla extract. Pour this pudding layer over the chocolate ganache in each ramekin. Chill in the refrigerator for at least one hour before serving. Serve cold and indulge in this decadent treat!
