- 1/3 cup kosher salt
- 2 teaspoons cracked black peppercorns
- 4 garlic cloves
- 2 bay leaves
- 1 lemon, cut in half
- 1 small red onion, sliced
- 1 whole chicken weighing around 3 pounds

- In a pot, combine 4 cups of water with the kosher salt, black peppercorns, garlic cloves, bay leaves, halved lemon, and sliced onion. Bring the mixture to a boil over high heat, then remove from heat and let the brine steep for 10 to 15 minutes. Transfer the pot to the refrigerator and stir occasionally as it cools.
- Once the brine is chilled, place the chicken and brine together in a large container or sealed plastic bag and refrigerate for 3 hours. After brining, remove the chicken and pat it dry before preparing it according to your preferred cooking method.
