  • 1/3 cup kosher salt
  • 2 teaspoons cracked black peppercorns
  • 4 garlic cloves
  • 2 bay leaves
  • 1 lemon, cut in half
  • 1 small red onion, sliced
  • 1 whole chicken weighing around 3 pounds

  1. In a pot, combine 4 cups of water with the kosher salt, black peppercorns, garlic cloves, bay leaves, halved lemon, and sliced onion. Bring the mixture to a boil over high heat, then remove from heat and let the brine steep for 10 to 15 minutes. Transfer the pot to the refrigerator and stir occasionally as it cools.
  2. Once the brine is chilled, place the chicken and brine together in a large container or sealed plastic bag and refrigerate for 3 hours. After brining, remove the chicken and pat it dry before preparing it according to your preferred cooking method.
