Preheat your broiler. Line a baking sheet with foil and arrange the chicken cutlets evenly on it. Brush them with 1 tablespoon of olive oil and season with salt and pepper. Broil, turning the sheet as needed to cook the chicken evenly, until they begin to brown lightly, about 2 to 3 minutes. Flip the chicken and continue broiling until fully cooked, another 2 to 3 minutes.2.
