Preheat your broiler. Line a baking sheet with foil and arrange the chicken cutlets evenly on it. Brush them with 1 tablespoon of olive oil and season with salt and pepper. Broil, turning the sheet as needed to cook the chicken evenly, until they begin to brown lightly, about 2 to 3 minutes. Flip the chicken and continue broiling until fully cooked, another 2 to 3 minutes.2. Take the baking sheet out of the oven and place a slice of ham and two slices of mozzarella on each piece of chicken. Broil again just until the cheese melts, roughly 1 to 2 minutes. Season with a bit of salt and drizzle with olive oil.3. Meanwhile, slice the baguette crosswise into 4 equal portions and split them open. Spread butter on the bottom halves and Dijon mustard on the top halves. Toss the watercress with the remaining 1/2 tablespoon olive oil and season with salt and pepper. Layer the chicken and watercress between the baguette halves to assemble the sandwiches.
