- Vegetable oil, for frying
- 2 cups pancake mix
- 1 cup yellow cornmeal
- 1 large egg
- Two 8-ounce blocks mozzarella, cut into 1/2-by-3-inch pieces

Special equipment:
12 bamboo or wooden chopsticks
- Pour or heat 2 inches of vegetable oil in a wide, heavy-bottomed pot and bring it to 350F.
- While the oil heats, mix the pancake mix, cornmeal and egg in a large bowl. Stir in 3 cups of water until you get a thick batter. The texture should be thick yet pourable; add a splash more water if it's too stiff. Transfer the batter into a glass tall enough to fully submerge the cheese lengthwise.
- Thread each mozzarella piece onto a bamboo or wooden chopstick.
- Working in batches of three, dunk the skewered cheese into the batter so each piece is completely coated, then gently lower them into the hot oil. Quickly turn the skewers so the batter sets evenly and begins to cook. Continue turning frequently and fry until the coating is golden and crisp, about 1 to 2 minutes. Drain on a plate lined with paper towels and repeat with the remaining pieces.
- Serve immediately with warmed marinara sauce for dipping.
